		<description>Love tabuleh! it&#039;s one of the best salads out there. when I make it I like using a coarser type of burghul (nice chewy texture), and I use finely diced regular white onion, and also a small cucumber ticed the same way - tiny! Also, I know it&#039;s a bit hard to do with the tomato but try to dice it as close in size to the rest of the veggies.
 
as for the herbs - Fresh mint is a must, not the least bit optional. It&#039;s the combination of flavors with the parsley and the olive oil that makes this salad POP. As for the parsley, try to use flat-leaf parsley as that&#039;s the type that is used in the middle east. It&#039;s much bolder in flavor than the curled-leaf variety. I live in Israel, so I get the original recipe all the time. Flat-leaf parsley and fresh mint are the key to a good tabuleh :)</description>
